I call this Garbage bowl salad because I usually use whatever veggies are about to go bad or hanging out in my fridge. I make some version of this salad at lease once a week. I always use kale as the base and I simply use my box grater to shred the carrots and radishes. You can use any other hard veggie you have on hand such as celery, peppers or daikon. Feel free to swap dates for raisons, craisins or even dried cherries work well. The combination of kale, lemon and tahini tastes so good. This is such a versatile dressing to have on hand for salads. I like to make extra to keep on the fridge. I hope you enjoy the recipe!
Ingredients:
2 bunches of Tuscan or Dinosaur Kale
2 carrots
4 radishes
1/3 cup cashews
1/4 cup chopped dates
Dressing:
3T tahini
juice of 1/2 lemon
2T coconut aminos
1T honey
sea salt and pepper to taste
Directions:
Remove stems from the kale. Tightly fold the kale and chop into thin strips. With a box grated shred the carrots and radishes. Add the Kale, grated vegetables and cashews and chopped dates into a large mixing bowl. In a glass jar combine salad dressing ingredients and shake with the lid on. With clean hands, massage dressing into the salad and enjoy.
